Webmeister note: Here’s the recipe that won Favorite Dish at the 2002 Crab Feast, courtesy of Matt Willenkin, who not only knows how to cook, but knows how to cook in a Porsche.


Ingredients:

          1 Large eggplant
          1 Mashed clove garlic
          ¾ tsp. salt
          1 tsp. lemon juice
          Pinch of cayenne
          Fresh ground black pepper
          2 ½ Tbs. sesame seeds


Directions:

          Stab the eggplant in a couple of places with a fork. Place it into a pan and then into the oven at 375 degrees for at least 1 hour, until very soft. Let it cool and then scoop out all the pulp. Discard the skin and mash the pulp well. Add all the ingredients except the sesame seeds.
          Roast the sesame seeds in a small pan, either in 400 degree oven or over a flame. Stir constantly if roasting them on top of the range. When they are light brown, remove and let them cool. Stir 1/2 of them into the mixture. Turn the mixture into a serving dish and sprinkle the remaining sesame seeds over it. Serve with crackers.


Hint:

          For the dish at the crab feast, I used 20 (twenty) cloves of garlic, NOT one.
